Abstract

ABSTRACT: The first Hispanic community in the Antilles, established in the new city of La Isabela, faced the challenge of survival and, at the same time, a first encounter between Hispanic and American cuisines. Despite its brief existence, it represents a decisive and necessary stage for the future of the colony. The difficulties of the conquest, with the cultural and biological shock and its dramatic consequences for the natives, did not avoid to a transformation of those societies from the perspective of food history, a reality that can be observed through what happened in that town.
