El consumo alimenticio de la élite hidalga en Galicia durante el siglo XVIII / The Food Consumption of the Gentlemanly Elite in Galicia During the 18th Century.

RESUMEN: Durante el siglo XVIII, la elite hidalga de Galicia vive una época de esplendor que se manifiesta en una mayor inversión en el mercado del lujo en relación con las centurias precedentes. Un apartado destacado de esta inversión en lujo lo representa el gasto que se deriva del consumo alimenticio. Éste actúa en la práctica como un elemento simbólico de distinción social y de poderío económico. De hecho, los pazos hidalgos se han convertido en importantes núcleos de consumo. En el siguiente artículo se aborda el estudio de los productos comestibles que se almacenan en las despensas de estos edificios, de cuáles fueron las pautas y el ritmo de consumo alimenticio, y de los factores que influyeron en el gasto alimenticio.
ABSTRACT: During the 18th century, the Galician noble elite experienced a magnificent period that was evident in a higher investment in the luxury market relative to the previous centuries. One of their most significant luxury expenses was food. Food consumption acted as a symbolic element of social distinction and economic power. In fact, Galician noble country houses have turned into significant consumption centres. The following article deals with the study of food stored in the pantries of these houses, with rules and pace of food consumption, and with the factors influenced foodstuffs expense.
